Cashew Nuts with chicken

Ingredients

  • 4 chicken breasts
  • 1 cup cashew nuts PRO ®
  • 2 onions chopped
  • 3 sweet peppers
  • 4 celery stalks
  • 1 cup chicken broth
  • ¼ cup soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 3 tablespoons cooking oil
  • Salt to taste

Instructions

  1. Cut the chicken breast into small bite size pieces and add salt to season
  2. Chop the sweet peppers and onions
  3. Combine ½ cup of chicken broth with the soy sauce, sugar and cornstarch
  4. On a Wok or a large skillet add the cooking oil and sautee the cashew nuts first, and remove
  5. Stir fry the chicken breast till golden and remove
  6. Sautee the veggies for a minute and add half the chicken broth, for 5 minutes until tender
  7. Add the other half of chicken broth previously prepared with soy sauce and cornstarch and the chicken pieces until the sauce is thicken
  8. Add cashew nuts and serve over white rice
